Alex Munoz Labart knew he was onto a good thing when diners at his restaurant, Labart, started ordering multiple serves of bread and butter, and then ordering again, in a single sitting. No one could get enough, but it made sense - for his was no ordinary butter.Toasted and caramelised until nutty, fragrant and beautifully brown, with a light whipped texture and a depth of flavour unlike anything else, he took butter and transformed it. The result was something so special it lifted everything it touched, sweet or savoury. Truly unbelievable stuff!

Fast forward a few steps, and Brun was born – a continuation of a buttery journey no one can resist.
